Prepare your lunchbox: easily, quickly and healthily

It is always the same question: what am I gonna eat tomorrow for lunch ? You stand every evening, lost and confused, in your kitchen, what are you gonna prepare for your lunch ? You do not have a self service at work ? You eat behind your desk in 30 minutes ? AKA knows what it is .... Even if you have a nice bakery or fast food close to your office, it is fat and/or expensive.

We like to prepare our lunch, and we have easy and quick recipes you can do while you prepare your dinner and if you want you can do enough for several days.

The principal for a good lunchbox is easy:

FIRST OF ALL: buy a tupperware ! They are cheap and now they do great tupperwares for lunchbox. (5 euros) But the best are the ones made in glass so it is good for environment :)

Then you mix everything inside. It does not matter. Everything should get well together.

So what do you put inside ?

1. vegetables (any kind, any way, any quantity): even if you put frozen vegetables in microwaves before putting them in your box, it is better than eating a pizza from the supermarket or a pasta box or any kind of this awful processed food.

2. carbohydrates: you can eat pastas, rice, bulgur wheat, potatoes. BUT you have to switch it for legumes some days, like lentils, chickpeas, quinoa, millet .... SO you can get lots of proteins and they are better for your "diet" than carbs.

3. meat, fish, eggs: only twice a week or less. For exemple: boiled eggs are easy to do, cary and keep in the fridge. Why only once or twice a week ? Because they are long to do, expensive and hard to keep long after cooking. And because if you eat legumes you will get enough of proteins, and you will avoid ingesting to much animal fat.

Then bring a yogurt or fruits to stand as dessert. AND PLEEEAAAASE, forget about crisps !! They are NOT food but junk.

You need a small kick for your imagination ? We tell you our "classical" lunchboxes recipes:

- Rice salad: the classical one ! Cook the kind of rice you prefer, with chopped raw tomatoes, tuna and boiled eggs. We dress it with olive oil or vinegar mixed with olive oil. Be careful not to put too much eggs and tuna because it does of lot of proteins for one meal. You can add peppers or cucumber to make it more tasty. Dress with pepper and salt or put chili in it. Transform it as you like.

- Quinoa with zucchinis, fenel and feta cheese. The tasty one! Grate your raw zucchinis and fenel in a bowl, add lemon juice and olive oil, then put pine nuts previoulsy browned in a fried pan and stir it together. Put it with previously cooked quinoa and add feta cheese (or any kind of goat or ewe cheese) Dress with pepper and salt. You can also add chopped cherry tomatoes.

-Pasta salad: The quick one !! Cook pastas, add olive oil so they do not stick together. Chop raw tomatoes and mozzarella cheese. Stir together, add pepper and origano or thym or basil.
